Can I extract application data from an iOS device?
I have a third party application on my iPad (Stanza) which has some data that I'm interested in doing some analysis of on my Mac (read statuses). Is there any way to get the data that the application has stored?
There is no need to jailbreak.
An application like JuicePhone will do the trick, if you have a MacOS X computer. Just make sure you turn off encryption for the backup.
