How do I reset an old iPod?
On Device
Go to Settings > General > Reset.
Then select Erase All Content and Settings

Using iTunes
Put the device in DFU mode: http://theiphonewiki.com/wiki/DFU_Mode
Then simply restore the device using iTunes.
